Matcha Pistachio Energy Bites

Gym bag snack that actually tastes like something.

10 minutes, no oven, 12 bites ready. Energy balls are the most searched "matcha snack" recipe on Pinterest and TikTok. This version uses baking-grade Ujikumi — bold enough to survive other flavours — plus Just Nuts Pistachio Butter for real nut richness. No protein powder needed.

Ingredients (makes 12 bites)

  • 1 cup rolled oats
  • 3 tbsp Just Nuts Pistachio Butter 100% — single ingredient, pure pistachio. The protein + fat + flavour in one jar.
  • 2 tsp Carnival Matcha Ujikumi — baking grade, punchy enough to cut through oats and nut butter
  • 2 tbsp honey
  • 2 tbsp desiccated coconut
  • Pinch of sea salt

Optional coating: Extra matcha powder, crushed pistachios, or coconut

Method

  1. Blitz the oats briefly in a food processor (or leave whole for more texture).
  2. Mix all ingredients in a bowl until combined. The mixture should hold together when you squeeze it. If too dry, add ½ tsp water or more honey.
  3. Roll into 12 even balls (about 1 tbsp each).
  4. Roll in crushed pistachios, extra matcha, or coconut.
  5. Refrigerate for 30 minutes to firm up.
  6. Store in an airtight container — fridge for 1 week, freezer for 1 month.

Ujikumi is our baking grade — it's intentionally more robust and earthy than IroIro. That boldness is exactly what you want when matcha is competing with oats, honey, and nut butter. A delicate grade would get lost. Ujikumi punches through.
